This talk focuses on applications of multi and hyperspectral imaging in the agriculture and food industry. Spectral imaging is a non-destructive technology that captures the spectral information of a product by recording its reflection in bands within the electromagnetic spectrum. Combined with machine learning techniques, spectral imaging can provide valuable information about the external and internal properties of agricultural products. Due to technological advances, multi and hyperspectral imaging systems have become more and more accessible in recent years, enabling a multitude of new possible applications for spectral imaging. Several spectral imaging systems are presented in this talk, applicable to practical use cases in fields like viticulture, mechanical weed control and quality inspection throughout the food supply chain. Techniques for analyzing these spectral images are shown and the results are discussed. The aim of this talk is to give an insight on the opportunities that spectral imaging has to offer for the agriculture and food industry, but also to discuss its limitations and challenges that need to be addressed through future research and development.
